A Technical Person I am Not….

We recently purchased a new fax machine and have a new fax number.

I didn’t realize until yesturday that our fax machine was conflicting with our answering service (thanks Robert for letting us know!).

Apparently after the 4th ring the fax machine would pick up instead of the answering machine. I appologize to those of you who tried to call and were unable to leave a message.

We have resolved the answering machine issue and you can now leave a message. I am almost sure we have the fax working properly but to make sure if you send us a fax please send us a confirming email as well.

Shipping Costs and our Website….

We just wanted to remind you that shipping costs are an estimate only!

Our website is linked directly with UPS and USPS so we assume we will receive accurate shipping costs through our shopping cart. This is NOT always true! It appears that for some reason we are getting a HIGH shipping estimate instead of a true shipping cost.

We have pulled our hair out (well…almost) trying to figure out what the problem is. We have entered in the exact weight of each product, without any padding for shipping materials and the shipping box…and we still seem to receive a high shipping estimate.

We always manually double check directly with the UPS and USPS websites to get acurate shipping costs and will adjust your invoice either UP or DOWN, as the situation warrants to reflect actual shipping costs.

Your order is NOT automatically processed if paying via credit card or paypal. Once we issue an invoice we manually process your payment. This avoids you paying more than necessary.

Remember: When ordering from our website the shipping estimate you see will most likely be higher than what is due. Don’t panic. Wait for us to email you a final invoice with the correct shipping cost. You can also email us for a shipping estimate in advance.

Favorite Holiday Recipes…

Please enjoy a couple of our favorite holiday recipes!

Sweet Potato Gratin

4 – 5 Sweet Potatoes (we do 1/2 sweet potatoes, 1/2 yams)

1 Cup Coarsely Chopped Pecans

1/2 Cup Brown Sugar, packed

2 Teaspoons Ground Ginger

1 Teaspoon Ground Cinnamon

Pinch of Nutmeg

4 Tablespoons Butter

2 Cups Mini Marshmallows

Place sweet potatoes/yams in a large pan of cold water and bring to a boil. Reduce heat and simmer until potatoes are just tender, approx. 20 min. Drain. Place potatoes in cold water until skins begin to loosen. Peel and set aside.

In a small bowl, combine pecans, brown sugar, ginger, cinnamon, nutmeg and butter using your fingers or a fork to blend.

Preheat oven to 450 degrees.

Butter an 8″ square dish. Slice potatoes into 1/4″ thick slices. Layer a third of the potatoes on the bottom of the dish. Sprinkle with a third of the butter/sugar mixture. Repeat layers. Cover with foil and bake until heated through, approx. 40 min.

Remove from oven and raise temperature to broil. Top with a layer of mini marshmallows and heat just until browned, 30-60 seconds.

Serve hot. Makes 6 servings.

Mom’s Potato Dish 

3 Cups Hot Mashed Potatoes (you can use instant, made with milk/butter)

1 Cup Sour Cream

2 – 4 Tablespoons Milk

1/4 Teaspoon Garlic Powder

1 & 1/2 Cup French’s French Fried Onions

1 Cup Shredded Cheddar Cheese

In a bowl mix potatoes, sour cream, milk and garlic powder. Spoon half into a greased 2 qt. baking dish. Layer with half of the onions and cheese. Repeat another layer. Bake, uncovered at 350 degrees for 30-35 min.

Holiday Shopping…

Thanksgiving is next week and if you are anything like me you are already thinking about holiday gifts.
